Ingredients:
Biscuit
1/3 Cup Almond flour
1 Cup White flour
3 Tbsp Butter, at room temperature
1 Tbsp Honey
3 Tbsp ice cold water
Topping
1 Cup Yogurt (used Skyr)
1-2 Tbsp Honey
Blueberries
Raspberries
Banana, sliced
Pomegranate
Melon slices
Plum, sliced
Figs, sliced
Instructions:
Step 1.
Preheat oven to 370 F.
Step 2.
In a large bowl, add all ingredients for the biscuit. Mix until dough forms.
Step 3.
Transfer the dough onto a parchment paper and roll into a circle. Bake for about 20-30 minutes or until golden. Allow to cool completely.
Step 4.
In a medium bowl, add the yogurt (skyr) and the honey. Mix well.
Step 5.
Break the biscuit into small bites. Spread the honey yogurt over the biscuit bites. Top with fruits. Serve immediately.
